Learn How to Make Easy Crockpot Chicken Pot Pie

I started making this Easy Chicken Pot Pie when my son was probably three or four (he's in his 20's now). I found the initial pot pie recipe on the back of a Bisquick box. The original Bisquick recipe is here.


Working a full-time job and then making sure that dinner was ready in a timely fashion is every parent's worst nightmare. Then coming up with something that your family will like is a whole other matter. I turned to the crockpot because they were meals that my boys could actually start eating if I was running late from work.


I have not changed the recipe too much; I've doubled it because it was never enough for my family. Instead of using frozen vegetables, I use canned mixed vegetables. I've used both raw chicken and cooked chicken in this crockpot version. When I make the oven version, I've used rotisserie chicken, pre-packaged cooked chicken, and even leftover chicken breasts from a previous meal.


The Easy Crockpot Chicken Pot Pie Recipe

Here is what you will need:


The Inside:

  • 16 oz of chicken - cut up into bite-size pieces (at least two cups). I use more or less depending on what I have.

  • 2 15 oz cans of mixed vegetables. Use whatever vegetables that you and your family like. I always have mixed vegetables in the house because I use them for making my homemade dog food.

  • 2 10.5 oz cans of creamed soup. Cream of Chicken, Cream of Mushroom, Cream of Celery, Cream of Potato. I have used them all. Again, it is what I have in the house and dependent on who is eating it.

  • 10.5 oz of milk (I fill up one of the soup cans once I have emptied it into the bowl)

  • Garlic salt and pepper to taste.

Mix all of this together in a bowl and put it in the crockpot.


Next, The Crust:

  • 2 cups of Bisquick

  • 1 cup of milk

  • 2 eggs, whisk the eggs before adding, it makes combining easier.

  • Garlic salt and pepper to taste.

Mix all ingredients together until they are fully combined and pour over the "insides" in the crockpot. Using a spoon or spatula, spread the topping to coat the vegetable mix.


Cover the crockpot and set it to low for 8 hours or high for 4 hours. Believe it or not, the crust will brown just like in the oven.


Once the crust has browned, remove the cover, dig in and enjoy!
